Why is saying "mentally retarded" offensive?

People can get offended over various things. What one person doesn't find offensive, someone else will. In this day and age of "PC" talk and whatnot, it seems everyone thinks walking on verbal eggshells is what is needed. I disagree. Being offended is a choice. Anyone can just as easily choose to not be offended.
